__Slow Cooker Broccoli-Cheddar Soup

2 T butter
½ chopped onion
2 T flour
2 cans chicken broth
2 c peeled and diced boiling potatoes
3 c broccoli, chopped and thinly sliced
1 can evaporated milk
12 oz sharp cheddar, grated (about 3 cups
1 tsp lemon juice

Melt butter, add onion, and cook, stirring often.  Stir in flour, gradually add 1 can broth and stir until thickened.  Transfer to slow cooker.  Add other can of broth and potatoes, stirring to combine.  Cover and cook on high setting for 2 hours or until starting to simmer. Stir in broccoli and milk. Cover and cook 30 minutes.  Stir in lemon juice and season with pepper. So good!
