Crockpot Baby Potatoes
Served at May 2021 Smith Garden Party

1 bag mixed mini potatoes. 
butter (prefer real, grass fed)
minced scallions
minced garlic
minced fresh parsley
minced fresh chives
sea salt
cracked black pepper
  • There are no "set" quantities; just use as much of each ingredient that seems right for the amount of potatoes.
  • Wash potatoes (do not dry off - want moisture in the pot) and halve (if any are very small, keep them whole - aim is that they are mostly close to same size)
  • Place in crockpot, season with salt, pepper, add scallions and garlic, mix around.  Drop chunks of the butter all around them.

  • Turn crockpot to low, and let 'em go!  very close to the end of the cooking cycle, sprinkle in the fresh parsley and chives (purpose is not to cook these herbs but to add a fresh color of green and a pop of flavor).
  • Check on them at around the 4 hour mark; should take 4 to 5 hours.
  • Enjoy!!
