Slow Cooker Homemade Potato Soup


6 potatoes, peeled and cut into bite-sized pieces
2 onions, chopped
1 carrot, peeled and sliced
1 stalk celery, sliced
5 chicken bouillon cubes
1 tbl. parsley flakes
4 cups water
1 ½ tsp salt
pepper to taste
2 tbl. butter
3-4 slices bacon, cooked and crumbled, optional
1 can evaporated milk

In slow cooker, place all ingredients except evaporated milk. Cover and cook on Low for 12 hours, or on High for 3-4 hours.  Stir in milk during the last hour.  If desired,  mash potatoes with a masher before serving. Not a Weight Watcher recipe.
