Classic Rice Pudding

Ingredients:

1/3 cup Uncle Ben’s converted rice

1 ½ cups water

1/3 cup sugar

1 tsp cornstarch

1 1/3 cups milk

½ tsp vanilla

2 egg yolks beaten

¼ tsp salt                                                                                                                                                                            
Directions:

Combine rice and water, bring to boil, reduce, cover, simmer for 25
min.

Combine sugar, cornstarch, and salt.
 
Heat to boiling and boil 1 min

Remove and add butter and vanilla.

In bowl, stir about 1  cup rice mixture into beaten yolks.

Cook over medium heart, stirring  frequently until bubbling starts.

Serve warm or chilled, plain or with raisins or cinnamon.
