Creamy Garlic Parmesan with Mushrooms & Spinach
(Served at Sweetheart Dinner 2019)

4-5 chicken breast or tenderloins
½ olive oil
Sauté chicken that has been salted and peppered I olive oil. Lay aside to drain after browning a bit.

1 pkg sliced mushrooms
Sauté I same pan until tender. Add more olive oil if needed.
Put in a bowl

4T butter
2T garlic
Put in the same pan and sauté garlic

Add
2T flour or corn starch
1C chicken bouillon
Make a roux then add chicken broth

1 pkg chopped fresh spinach
Add to pan

2 C cream or ½ & ½
1C parmesan cheese
Add to pan and let simmer until a bit thickened

Add all together with chicken and let simmer on low.
Taste to see if salt and pepper are needed.

Serve over rice.
Sprinkle with more cheese if desired.
